Chocolate Avocado Pudding
This Chocolate Avocado Pudding is great as dessert but also makes for a great breakfast! It is loaded with healthy fats from coconut milk and avocado plus its antioxidant rich with raw cacao powder.
I bet you and your kids would never know this is healthy for them.
This pudding is dairy free and refined sugar free… sweetened with maple syrup but you can easily sub it for dates. If using dates, soak them in hot water for a few minutes first to soften them up so they blend easily.
I also love that it can be made in a blender, making this a super simple, easy and fast recipe.
The pudding is best served cold. You can do 1 of 2 things:
make the pudding and place in the fridge for 30 min or more before serving
keep you avocados in the fridge so its cold when you make it and you can enjoy right away.
Tip - Keeping your avocados in the fridge will allow them to last so much longer than on the counter!
The recipe I give below is a great starting point… you may want to adjust because the size of avocados vary. I always start with the below amounts and then add more maple syrup, coconut milk or cacao powder as needed.
*Note - this pudding freezes very well. Store in a freezer safe container and freeze for up to 3 months. Put in the fridge the night before to thaw.
