I am always a fan of recipes that can just go in the blender and this is one of them! These grain free, gluten free and dairy free pancakes are a breeze to make… simply put all the ingredients in a blender, blend and pour to cook. It couldn't be more simple and the kids love them. Win, win for all!

These grain free, gluten free and dairy free pancakes are a breeze to make… simply put all the ingredients in a blender, blend and pour to cook. It couldn't be more simple and the kids love them. Win, win for all!

Ingredients:

  • ½ cup cassava flour
  • ½ cup almond flour
  • 2 eggs
  • ¾ cup dairy free milk or water (more as needed for thinner pancakes)
  • 2 Tbsp maple syrup
  • 2 Tbsp avocado oil or coconut oil
  • 1 tsp of baking powder
  • ¼ tsp salt
  • ½ tsp vanilla (optional)

How to cook Blender Pancakes

  1. Combine all ingredients in a blender and blend for 20-30 sec until the batter is smooth.
  2. Lightly grease a griddle or a large skillet with ghee or oil and set over medium heat.
  3. Pour batter into a hot skillet and cook until bubbles start to form on top of the pancake, about 2 minutes. Flip and continue to cook for 2-3 minutes until cooked through. Repeat until all the pancake batter is used.
  4. Serve with maple syrup.
