Ingredients:

  • 1 - 2 leek chopped 
  • 1 yellow onion chopped (equal parts leek and onion) 
  • 4 - 6 cloves of chopped garlic Avocado Oil (about 2 Tbsp) 
  • 2 heads of broccolli or 4 cups frozen broccoli 
  • 8 - 10oz frozen spinach or kale 
  • 4 - 6 cups Broth (chicken or veggie broth) 
  • 1 tsp+ sea salt ½ tsp white pepper (I like to use white pepper so it doesn’t change the color of the soup)

How to cook Green Leek Soup

  1. Heat a stock pot over medium heat. Add avocado oil, leeks, onions and garlic and saute until tender and fragrant, about 5 min. Next add broccoli and enough broth to cover the veggies (if you need more just add water). Turn the heat to high and bring to a boil until the broccoli is fork tender, about 10 min. Add frozen spinach or kale and boil for another 2-3 minutes. Turn the heat off and let cool for a bit. 
  2. Either use an immersion blender or pour contents in a blender and blend until well blended and soup like (be careful using a high end blender and not blending it too high for too long or you will get air bubbles and it will become frothy). Once blended, pour back into the pot and turn on medium low heat to reheat and bring the flavors together. Add salt and pepper to taste (I start with 1 tsp salt and add more as needed). 
  3. This serves great hot but also cold is really good too.
