Chicken Squash Sliders

 
 

These sliders are delicious and perfect for spring or summer! I lighter twist on sliders plus packed with veggies.

I am not a huge fan of summer squash so I am always looking for other ways to get it in my diet. This does the trick. Serve it on a gluten free bun or over a simple Vinegar Cole Slaw… my favorite!

Chicken Squash Sliders

Chicken Squash Sliders
Yield: 12 sliders

Ingredients:

  • 1 lb ground chicken
  • 2 cups shredded Squash
  • 1/4 - 1/2 cup diced onion
  • 2 cloves of garlic minced
  • Sea Salt and ground pepper

Instructions:

  1. Line a strainer with a dish towel or paper towels. Shred squash and place in i the towel lined strainer. Sprinkle with sea salt, about 1 tsp, toss and let it sit for 10 min or more to drain. Squeeze out as much liquid from the squash as possible.
  2. In a mixing bowl, mix squash, ground chicken, onion and garlic. Form into patties about the size of your palm and place on a dish.
  3. Heat a skillet or grill over medium heat and add avocado oil. Liberally season one side of the patties with salt and pepper and place face down in the hot skillet. Now season the other side with salt and pepper. Cook for about 4-5 min and then flip and cook for another 4-5 min. This may need to be done in batches.
  4. Remove from the skillet and place on a towel lined plate until all are done. 
  5. Serve and Enjoy!

Notes:

The sliders are usually done on one side when they easily release from the pan. If they are sticking, they probably aren’t ready.
