Cold Spinach Artichoke Dip
Looking for the perfect dip to enjoy on a hot summer day? This is it… this Cold Spinach Artichoke Dip is light, refreshing and packed with veggies and healthy fats. You can enjoy this until your heart is desired!
This dip uses dairy free yogurt and mayo. While you can certainly make your own (recipe here for mayo), I am all about easy and these are my go to brands:
Culina Coconut Yogurt (plain and simple)
Enjoy this dip with fresh cut veggies, like carrots or cucumbers, or your favorite chips, like plantain chips, Flackers Crackers, Simple Mills Almond Flour Crackers or Terra chips.

Cold Spinach Artichoke Dip
Ingredients:
- 16 oz frozen organic spinach defrosted
- 2 cans of artichoke hearts
- 1 small yellow onion chopped
- 3- 4 cloves of garlic chopped
- 1 cup plain dairy free yogurt
- ¾ cup mayo
- 1 Tbsp lemon juice
- 1 tsp salt
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp black pepper
Instructions:
- Heat a skillet over medium heat. Add a little avocado or olive oil and saute onions until tender for about 2-3 minutes. Add the garlic and cook for another 2 minutes. Remove from the heat and pour onion and garlic into a medium size bowl.
- While the onions and garlic are cooking, drain and chop the artichokes and spinach (I do this separately). Put spinach and artichokes in the bowl with onions and garlic.
- In a separate small bowl or blender, mix yogurt, mayo, lemon juice and seasoning. Add the yogurt mixture to the larger bowl with the spinach and artichokes and mix until well combined.
- Keep in the refrigerator in an airtight container until ready to serve.
- Enjoy!
