Vinegar Coleslaw
I’m a Southern girl and love a good coleslaw on the side of my BBQ… pulled pork, ribs, or brisket. With that said, I just can’t stand a creamy one. I like something light and refreshing to counter the richness of BBQ.
This Vinegar Coleslaw does just that! Bonus it is super simple to make, especially if you buy organic coleslaw in a bag… no shredding (I am all about ease over here). Just make the dressing with 4 simple ingredients, toss and enjoy!
While I usually think of coleslaw as a side to BBQ it also makes a great based for burgers and sliders since I don’t use buns anymore. This slaw under my Chicken Squash Sliders is one of my favorite meals during the summer… yummm.

Vinegar Coleslaw
Ingredients:
- 12 oz bag of organic coleslaw or 1 head of cabbage thinly sliced and 2 carrots shredded
- 2 Tbsp olive or avocado oil
- ¼ cup Apple Cider Vinegar or lime juice
- 1 tsp Sea Salt
- ½ tsp ground black pepper
Instructions:
- Put coleslaw in a medium size bowl.
- Mix oil, vinegar, salt and pepper in a small bowl and pour over the coleslaw.
- Keep in an airtight container in the fridge for a few hours before serving to let the flavors come together.
- Serve and Enjoy!
