Granola Cookies

These Grain Free Granola Cookies have become one of my favorite snacks/treats that I can feel good about eating. Loaded with nuts and seeds giving you healthy fats and fiber your body needs and nothing it doesn’t.

My neighbor and friend of mine makes Granola Cookies that she and her family love to eat for breakfast on the go but they are loaded with sugar. She challenged me to make a version that’s sugar free. I decided to accept the challenge and also make it egg free and grain free while I am at it.

You may notice… I love a challenge. Ha!

Well, thanks to monkfruit sweetener (to replace white sugar) and more seeds, I succeeded AND she approved!

With monkfruit, you still get a little sweetness but none of the downsides of refined sugar. You can read my post, Slash Sugar, on why we should limit sugar consumption and ideally avoid refined sugars.

My go to monkfruit sweetener is Lakanto and you can purchase here on Amazon.

Note - while, they say it can be used as a 1 to 1 ratio for substituting white refined sugar, Monkfruit Sweetener is a little different and sweeter taste.

 

These cookies are are satisfying for a mid day snack or breakfast on the go!

While I call these a cookie, they are not as sweet or soft as a cookie and are more crunchy like granola. You can eat these as often as you like… guilt free!

Ingredients:

  • 1 ½ cup walnut pieces
  • 1 cup whole or sliced almonds
  • 1 cup shredded coconut
  • ¾ cup pumpkin seeds
  • ½ cup sunflower seeds
  • 3 Tbsp coconut or avocado oil
  • ½ tsp salt
  • 2 Tbsp chia seeds
  • ½ cup water
  • ⅔ cup monkfruit sweetener
Optional
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat the oven to 325. Line a baking sheet with parchment paper.
  2. Toss nuts, seeds, coconut, salt and oil together and spread on the baking sheet. Roast granola mixture for about 10 minutes until fragrant.
  3. While granola is baking, mix chia seeds and water in a medium size bowl and let sit for 5 minutes to congeal. Next add monkfruit sweetener and vanilla and cinnamon, if using. Stir until well combined.
  4. When granola is done, pour granola mixture into the bowl and mix everything together well.
  5. Scoop granola mixture onto the baking sheet using a cookie scoop to make granola bites. You may need to use your hands to put it together as the granola is loose before baking. Bake for 15 minutes.
  6. When done, remove from the oven and let cool on the baking sheet for about 10 minutes before moving them to a cooling rack. Note, they will be soft while they are still hot but will harden and hold their shape as they cool.
  7. Enjoy!

Notes:

Store in an airtight container for up to a week or in the freezer for 3 months
