Berry Fruit Crisp

This is one of my kids favorite desserts of all time! And frankly I am more than happy for them to enjoy it as much as they want. We also love it cold the next day… that actually might be my favorite. Yumm!

While I use fresh berries in this recipe you can use frozen berries too. Just defrost them and let them drain very well in a strainer before making this.

If you can’t find berries or don’t like berries… sub a different fruit! This recipe is very flexible and you can make any kind of crisp you want.

This Dessert is loaded with:

  • antioxidant loaded berries

  • no grains, gluten, dairy or refined sugar

  • some healthy fat from ghee or butter (only from grass fed cows)

Note - I use arrowroot powder to absorb some of the liquid from the fresh berries and make it more of a syrup versus juice once it cools. If you don’t have arrowroot powder, just skip that step. I made it without it for years.

Ingredients:

Filling:
  • 4-6 cups fruit (I buy 3 pints)
  • 2.5 Tbsp arrowroot powder
Topping:
  • 1 cup Otto's Cassava Flour
  • ½ cup coconut sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 large egg whisked
  • ½ cup melted ghee or grass fed butter

Instructions:

  1. Preheat the Oven to 375 and grease an 8x8 baking dish (I use coconut oil). 
  2. Rinse and dry the fruit. Mix berries with the arrowroot powder and pour them into the baking dish.
  3. In a medium bow, mix all of the dry ingredients for the topping. 
  4. Add the whisked egg into the dry topping mix. Mix until it creates a crumble topping (note some of the ingredients will still be dry and that's ok).
  5. Pour the crumble topping evenly over the fruit. 
  6. Drizzle the melted ghee or butter over the top of the crumble (I usually don't use all of it ).  Not every part of the topping needs to be covered with butter.
  7. Cook for 45 min until golden brown. 
  8. Let cool for 10 - 20 minutes before serving. Enjoy!

Notes:

This is great with ice cream on top as well as cold out of the fridge the next day as is or with your favorite dairy free yogurt!
