Grain Free Cowboy Cookies

These Grain Free Cowboy Cookies are delicious and full of good stuff… nuts, seeds, coconut and chocolate! Traditional cowboy cookies are made with oatmeal (which you can get gluten free) but I chose to make them with almond flour instead). These definitely satisfy my sweet tooth with the perfect crunch!

While this recipe is sweeter than my usually cookies I will give a susbsitue below that uses half the sugar. I find it just as satisfying but definetly not as sweet.

So why the 2 versions? Sometimes I want a “real” cookie but most of the time I want the satisfaction of a cookie but not all the sugar.

While I use coconut sugar in this cookie recipe and coconut sugar is better than white sugar, it is still sugar! For the most part, I try to keep all stage low in my diet.

NOTE - recipe is 1/2 cup tahini or nut butter of choice

*These Grain Free Cowboy Cookies are Gluten Free, Grain Free, Refined Sugar Free, Dairy Free and Egg Free.

 

To make with less sugar:

  1. substitute 1/4 cup maple syrup for the coconut sugar

  2. use 1/2 cup shredded coconut instead of 1/4 cup

Grain Free Cowboy Cookies

Yield: 18 cookies

Ingredients:

  • 1 chia or flax egg (mix 1 Tbsp ground chia/flax seeds with 3 Tbsp water)
  • ½ tahini or nut butter of choice
  • 1 tsp vanilla extract
  • ½ cup almond flour
  • ½ cup coconut sugar
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ¼ cup chocolate chips
  • ¼ cup shredded coconut
  • ¼ cup chopped pecans

Instructions:

  1. Preheat the oven to 350 and line a baking sheet with parchment paper or silicone baking mat.
  2. In a mixing bowl, mix flax or chia seeds and water. Let it sit for about 5 min to congeal.
  3. Add tahini and vanilla to the flax egg and mix well. Add remaining ingredients and mix well. This will be very thick but will come together.
  4. Use a cookie scoop or tablespoon to scoop dough onto the prepared baking sheet. Optional, sprinkle with  sea salt flakes.
  5. Bake for 12 - 15 minutes. Remove from the oven and let cool.

Notes:

Note, these cookies do not really spread when they bake. If you want them flat, you need to press flat with your hands.
