I used to be so intimidated by the idea of making my own tortillas but once I made them I realized its really easy and they are soooo much better! Once you try these Grain Free Tortillas, you won’t go back to regular ones... or you won’t want to, I promise.

These are delicious and no one can ever tell that they are grain free and gluten free! Use these tortillas for tacos, quesadillas, wraps or more.

With only 4 simple and clean ingredients, you may be surprised how easy it is to make your own tortillas:

  • Cassava Flour

  • Avocado or Olive Oil

  • Water

  • Salt

These tortillas are easy to make but I have found these tips make it much easier:

  1. Fluff cassava flour with a fork before measuring and scrape excess flour off the top of the measuring cup to be as close to the measurement as possible.

  2. The dough should be like play dough when formed into balls. If not, add more water about 1 tablespoon at a time until it is.

  3. Use a tortillas press! You can find a link to the one I like here.

  4. Line tortilla press with plastic wrap or wax paper to keep tortillas from sticking to the press.

Note - While these are very simple and easy to make they do take some time. They freeze well so I like to double the batch and make a bunch of them. Just make sure to put a piece pf parchment paper in between each tortilla before freezing!

Grain Free Tortillas

Yield: 18 street taco size tortillas

We love these tortillas and no one ever knows they are grain free and gluten free! These are easy to make but do take time. You may want to double the batch and freeze any extras.

Ingredients:

  • 1 ½ cups cassava flour
  • ¾ cup water
  • ⅓ cup avocado or olive
  • ½ tsp salt

Instructions:

  1. In a mixing bowl, whisk together flour and salt.
  2. Add water and oil and mix until well combined. It will be slightly crumbly (like pebbles). Make a large ball out of the dough with your hands. It should be a consistency like play dough. If it’s too dry, add a little bit of water at a time. It should not be watery.
  3. Divide into roughly 18 balls the size of ping pong balls
  4. Roll out between parchment paper or press using a tortilla press (highly recommend this path!).
  5. Heat a skillet over medium to medium heat. Place the tortilla on the dry, hot pan. Cook for about 1 minute until air pockets begin to form (see pics).
  6. Flip and cook for another minute. Remove and let cool on a kitchen towel or cooling rack.
  7. Repeat until all are done.

Notes:

These freeze well. Place a piece of parchment paper in between each tortilla and place in a freezer safe container. Freeze and pull out tortillas as needed. Warm up in a skillet or for 15-20 sec in the microwave.
