Balsamic Marinated Tomatoes
These Balsamic Marinate Tomatoes are simple to throw together and perfect for any party or to keep in the fridge and snack on during the day. These tomatoes are best when made in advance to give the flavors time to come together.
While I usually add basil to the tomatoes and serve like a bruschetta, you can easily omit the basil and still find them amazing!
When I serve it as a dip, I like it with a variety of Simple Mills grain free crackers… Almond Flour Crackers, Sprouted Seed Crackers or the Veggie Pita Crackers. Also great with Flackers Organic Flax Seed Crackers to give an extra boost of Omega 3’s.
Pictured above, I also served the tomatoes with jicama wedges for even more veggies power.
If you can tolerate grains, try it with gluten free toast points.

Note - if you are using a real Olive Oil, it will congeal in the fridge. Simply pull it out in time to come to room temp, give it a stir and you are good to go!
Balsamic Marinated Tomatoes
Ingredients:
- 2 cups cherry tomatoes halved
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 clove garlic chopped
- handful of chopped basil (optional)
- ½ tsp salt
- ¼ tsp ground black pepper
Instructions:
- Cut cherry tomatoes in half or quarters and put them in a bowl. Add basil and garlic.
- In a measuring cup, mix oil, vinegar, salt and pepper. Pour vinegar dressing over the tomatoes and toss until well mixed.
- Sprinkle with salt and pepper, mix, taste and add more salt if needed.
- Keep in an airtight container in the fridge until ready to serve.
- Serve and Enjoy!
