French Toast Casserole

Ingredients:
- 1 loaf grain free or gluten free bread cut into cubes (we like Canyon gluten free 7 grain bread)
- 8 eggs
- 2 cups dairy free milk (I prefer cashew milk)
- ¼ cup maple syrup
- 2 tsp vanilla extract
- 1 Tbsp cinnamon
- ¼ tsp salt
Instructions:
How to cook French Toast Casserole
- Grease a 9x13in baking dish with ghee or coconut oil and put cubed bread in the prepared baking dish.
- In a medium sized bowl, mix eggs, milk, maple syrup, vanilla extract, cinnamon and salt. Pour mixture over bread pieces.
- Cover and place in the refrigerator overnight.
- When ready to cook. Pull the casserole out of the fridge and preheat the oven to 350.
- Bake for 45 min to 1 hour until the top is golden brown and the eggs are cooked through.
- Serve with a drizzle of maple syrup.
