Ingredients:

  • 1 loaf grain free or gluten free bread cut into cubes (we like Canyon gluten free 7 grain bread)
  • 8 eggs
  • 2 cups dairy free milk (I prefer cashew milk)
  • ¼ cup maple syrup
  • 2 tsp vanilla extract
  • 1 Tbsp cinnamon
  • ¼ tsp salt

Instructions:

How to cook French Toast Casserole

  1. Grease a 9x13in baking dish with ghee or coconut oil and put cubed bread in the prepared baking dish.
  2. In a medium sized bowl, mix eggs, milk, maple syrup, vanilla extract, cinnamon and salt. Pour mixture over bread pieces.
  3. Cover and place in the refrigerator overnight.
  4. When ready to cook. Pull the casserole out of the fridge and preheat the oven to 350.
  5. Bake for 45 min to 1 hour until the top is golden brown and the eggs are cooked through.
  6. Serve with a drizzle of maple syrup.
